1. Sourdough Sticky Pull-Apart Bread

This bread is soft, buttery, and packed with cinnamon sugar, caramelized pecans, and a drizzle of maple glaze. It’s a showstopper for brunch or dessert, but surprisingly simple once you break it down.

Ingredients

Dough

  • ¼ cup active starter

  • 1 ā…“ cups warm water

  • 4 tbsp unsalted butter, melted

  • 2 tbsp sugar

  • 2 ¾ cups bread flour

  • ¾ cup all-purpose flour

  • 1 ½ tsp salt

Sticky Topping

  • ¾ cup brown sugar

  • ¼ cup honey

  • ½ cup unsalted butter

  • ½ tsp salt

  • ¾ cup pecans, chopped

Cinnamon Filling

  • 3 tbsp unsalted butter, softened

  • ½ cup brown sugar

  • 1 tbsp cinnamon

Maple Glaze

  • ¾ cup powdered sugar

  • 2 tbsp melted butter

  • 3 tbsp maple syrup

  • 3 tbsp heavy cream

Instructions

1. Make the Dough

Mix starter, warm water, melted butter, and sugar in a large bowl. Add the flours and salt, stirring until no dry bits remain. Cover and let rest for 30–60 minutes.

2. Knead

Stretch and fold the dough a few times until it’s smoother and elastic. Place seam side down in a buttered bowl. Cover and let rise at room temperature until doubled (8–10 hours depending on kitchen temperature).

3. Prepare Sticky Topping

While the dough rises, melt butter, honey, brown sugar, and salt in a saucepan. Stir until smooth. Pour into a greased 9x5-inch loaf pan and sprinkle pecans over the top.

4. Roll & Fill
Once dough has doubled, punch it down and roll into a 12x12-inch square. Spread with softened butter, sprinkle with cinnamon sugar, then cut into 16 squares.

5. Assemble
Stack dough squares upright in the loaf pan over the sticky pecans. Sprinkle any extra sugar mixture on top. Cover and let rise again until puffy (about 3–4 hours, longer if your kitchen is cool).

6. Bake
Preheat oven to 375°F. Bake 80–90 minutes, until golden and the center reaches 190–200°F. If the top browns too fast, cover with foil. Let cool in the pan for 10 minutes before flipping onto a serving plate.

7. Glaze & Serve

Whisk powdered sugar, melted butter, maple syrup, and cream until smooth. Drizzle over warm bread, pull apart, and enjoy.
